It worries me that when I lift the back of the quad up to get the weight off the shocks, the spring is fully unloaded and the collar is above it with room in between. Is this normal? Or do I need to thread the collar down so that it meets the spring? Just not sure if I can thread it further up to get the ride height down a bit. It's kinda weird because I am about 215lb and it still doesn't sit down to 7.5"...

Sounds like your spring rate is too high for your weight, the rear spring should be at 10" when suspended and there should be some tension on the spring to get the ride height to 7 1/2 - 8 no gaps...Sounds like you need a better set-up to fix this. Agree odd a 215 person can't get the ride height.
