2008 can am 450 ds limp mode problem

I hope someone can help me solve my problem. I have a 2008 can am 450ds (pink wire is cut, removed air box lid, every thing else is stock) and for whatever reason the engine light will stay (I have tried turning the key 10 times and unhooking the battery) on when I crank it up and it runs fine at first. But after about I say a hour or 2 of just normal riding it wants to bounce in and out off limp mode. The engine light will stay on but not flash. I have water wetter in the radiator to try and keep the temps down and I have the fan on a switch and I have checked all the reallys and fuses and I can’t figure out why it keeps going in and out of what I think is limp mode. The bike will start to try and choke it’s self off and I have to down shift to keep it running but I can turn the bike off and crank it back up and it will ride like nothing is wrong????
